The duck I hunted last fall to eat for New Year's - that was one very fatty duck. I had almost 4 times as much fat as I did meat on that duck.
I know duck is a fatty bird, but I've never had one that fatty. Usually, I get a little more meat than fat. I hardly ever get enough duck grease. This time, I had so much duck grease, I used the excess to coat the dry kibble the dogs were eating as a treat for them.
They were soooo happy.
I let them lick the foil I lined the roaster with before I washed and tossed it in the recycler, and that made them even happier. They wagged their tails with their eyes adoringly fixed on me as their tongues lapped up as many droplets of grease as they could, and now they're whining at the trash bag. I suppose I'll have to double-bag it and set it outside.
And next year? I'm hunting elsewhere. I like a little meat on my duck.
